
The Summer months are the perfect time to experiment with different salads. This will help to keep your kitchen cool, as well as use of your fresh garden vegetables. This cucumber salad is super simple to make, uses only a few ingredients, and is deliciously creamy. For additional protein you could consider adding Tuna or Grilled Chicken, which would make it a fantastic dinner option for the whole family to enjoy. (Yes, even my toddler loves this!)
What Do you Need to make Creamy Cucumber Salad?
Nope, there is no lettuce needed for this salad!
- Cucumbers
- Cucumbers offer several health benefits and they’re typically one of the more common vegetables that people include in their gardens. Cucumbers are about 95% water which makes them an excellent source of hydration, something we all need during the hotter months. They also contain essential nutrients for bone health, protecting the body from free radicals, and promoting digestive health. They are also known to support blood sugar and blood pressure regulation.
- Red Onions
- Red onions are rich in antioxidants like quercetin and anthocyanins, which help protect the body against cell damage, inflammation, heart disease, and even cancer. They also promote bone and gut health. If you absolutely hate onions (like my mom) you can omit them. However, I highly recommend adding them.
- Dill
- You can use fresh or dried dill. I always have a hard time keeping fresh herbs from going bad in my refrigerator, so I often opt for the dried version.
- Lemon Juice
- You can use fresh lemon juice or bottled lemon juice. Also, did you know that Lemon juice helps your body absorb iron and prevents kidney stones?
- Plain Greek Yogurt
- This is what provides the creaminess for this salad. If you prefer a vegan option, you could always opt for an olive oil or vinaigrette or Italian dressing. I prefer Greek Yogurt, plus it also allows for this salad to contain some protein. Greek Yogurt is also known to improve move and reduce stress, it is also essential to thyroid health and support the immune system.
- Fine Ground Sea Salt
- Cracked Black Pepper
- Garlic Cloves
- This is one of the times where I advise against using the jarred minced garlic or garlic powder.
Can I Add Other Ingredients?
Of course! Here are some options that I would recommend.
- Cherry Tomatoes
- Bell Peppers
- Tuna, Shrimp, or Grilled Chicken
Do I Need any Special Tools?
No special tools are necessary for making this salad. Most everything you will need; you more than likely already have in your kitchen.

Creamy Cucumber Salad
This creamy cucumber is the perfect summer lunch or dinner side dish. Plus it is low calorie and packed with vitamins.
Ingredients
- 1/2 of Red Onion (chopped)
- 2 Cucumbers (Thinly Sliced)
- 1 Garlic Clove (Minced)
- 1/2 teaspoon of Sea Salt
- 1/2 teaspoon of Black Pepper
- 2 Tablespoons of Lemon Juice
- 4 Tablespoons of Dill
- 1/2 Cup of Plain Greek Yogurt
Instructions
- Wash and prep vegetables
- Mix everything in a large mixing bowl
- Serve
- Store in the refrigerator for up to 3 days

- For added protein consider adding Shrimp, Grilled Chicken, or Tuna
- Add additional vegetables like cherry tomatoes (halved) or Bell Pepper (chopped)
