You can use whatever kind of apples you would like for your apple juice. However, it is generally recommended to combine both sweet and tart apple varieties. What you would want to do is juice 8 fuji, honey crisp, golden delicious, or gala apples with 8 granny smith or pink lady apples. My personal favorite is 8 fuji apples and 8 granny smith apples. If you prefer to just stick with one kind of apple, I recommend using McIntosh apples.
